English Muffin Mini Pizzas

Hey there!

Don’t you hate when you get your days of the week mixed up or the time seems to be moving backwards and you feel like it should be tomorrow already?! 

Well that was me yesterday – the day just didn’t want to end! So I was pretty bogged down last night to clean and cook an elegant meal. I took a quick look in the kitchen and found; English muffins/naan bread, tomato sauce, cheddar/feta, pepper, red/green onion, bacon and last nights left over chicken. Instantly my mind went to pizza, DUH! πŸ•βœ”οΈ
     

The boy and I dressed up our pizzas and waited a quick 10 minutes until we could indulge! Being our first time making these, we tried a few different things (included in notes).

Instructions

  1. Preheat oven to 350 degrees, grease baking pan
  2. Cook bacon and crumble. 
  3. Chop vegetables
  4. Lay out English muffin/naan bread
  5. Add sauce, cheese, vegetable, meat etc.
  6. Bake in oven for 10 minutes or until cheese has melted, enjoy!!

Notes 

Some pizzas I added extra sauce. Try cheese on top (I like this way because it secures my toppings).   

My favourite pizza combination of the pack would have to be the;

  1. Regular sauce
  2. Little cheese on bottom
  3. Red onion
  4. Green onion
  5. Bacon 
  6. Feta on top

YUM!

… My boyfriends favourite was all the fixings (of course) and he preferred the naan bread over the english muffin. The naan did have more a pizza dough/crust texture to it!

Well as I spend my morning commute enjoying a vanilla hazelnut coffee from Java Joes and writing this post for you, I’ve realized its Wednesday – so happy hump day you beautiful people! 🐫

Sous-Chef: Lemon Dill Chicken Breast

Hey there!

So last night I played the roll of the sous-chef for my boyfriend. My plans for the night were to pamper myself and relax, I had bought a charcoal peel face mask I want to try out! A deal was made that I’ll just help with prep πŸ‘ŒπŸΌ

All showered and squeaky clean, I applied the mask. It said to apply an opaque layer so it took a few minutes to cover my face, making sure I got my nose and t-zone! Then I had to let is sit and harden for 30 minutes. With that waiting time (my boyfriend thought I looked hilarious) but I helped him clean and prep some of the herbs and veggies he needed for our dinner!

This is what he made for us πŸ‘ŒπŸΌπŸ˜   

Lemon Dill Chicken

Ingredients

  1. 2 Chicken breast with bone 
  2. 2 tbsp Butter
  3. 2 tbsp Oil
  4. 1/3 cup Lemon juice
  5. Dill to rub and garnish

Intstructions

  1. Preheat oven to 375
  2. Marinate chicken in dish with oil/butter, lemon juice and dill. 
  3. Place chicken and juices in a greased baking dish and cover with tin foil. Bake for 45 minutes. 
  4. Serve with you desired side, enjoy!!

Notes

We only had fresh dill, dry dill would be preferred to rub on the chicken easier. 

  

I am so lucky with my man! He served me the prettiest plate of food. The sides we had with our chicken we scrumptious – mashed sweet potatoe, asparagus, mini baked potatoe and red peppers!! The lemon dill chicken was paired nicely with a white wine (I’m more of a beer drinker) but it was so eligent – a perfect dinner for two!!

As for the charcoal mask, that was painful to peel off!! But my face feel nice this morning πŸ™‚ Well my work is the next stop coming up (subway commuting life).

Work Lunch: Instant Oats Done Right!

Hey there!

We’ve made it – to lunch… The sun is shining the weathers getting up to 24 degrees today and I’m inside working out with the old folks. At least it’s lunch time so I can head out to enjoy some sun. I can’t wait until I can bring my residence outside for exercise and sunshine, it’ll be great for both parties!

I’m fortunate to have a TV in the gym at my work – I’ve been watch the Toronto Blue Jays play Boston Red Sox since 11 and  will continuing watching through my lunch hour (currently 1-0 BostonπŸ˜”) LETS GO BLUE JAYS!! βšΎοΈπŸ’™

As I said yesterday, I prep my lunch for the weekend on Sunday evenings. Since I only have a little protein packed cookie for breakfast (recipe in previous post) I make nice healthy bowls of instant oats to keep me full and fuelled for the rest of my day! πŸ’ͺ🏼 Below I have included the way I dress up my plain boring instant oats!!
Healthy Instant Oats

Ingredients

  1. 1/2 cup instant oats
  2. 1/4 cup dried cranberry or blueberry
  3. 1 tbsp chia seed
  4. 1 tbsp hemp hearts
  5. 1/2 tbsp honey (to sweeten)
  6. 1 tsp cinnamon
  7. 1/3-1/2 cup boiling water (varies for you desired texture of oats)

Instructions

Place all dry ingredients in a bowl and then add water to desired texture. Stir and let sit for 2 minute to absorb all water. Enjoy!!

If you haven’t realized, I add chia seed and hemp hearts to everything. I make sure to always have them in the pantry because they are just that good for you! I will get into the benefits of chia seeds and hemp hearts when I begin posting about my healthy habits!!

Well, my lunch breaks almost over – Jays only in bottom of the 6th. Fingers crossed the finish with a win!!

Breakfast ‘to-go’ Cookies

MONDAY NOT SO FUN DAY

For a lot of us, we’re heading backing to work..  day 1/5. It just not so easy having to jump back into the routine – waking up by an annoying alarm, sun hasn’t even risen yet, boyfriend still passed out in bed, cold walks to the subway.. None of that sounds appealing! But we do the grind and may I say we kill the grind so we can live the life. The life you want is your motivation to get up in the morningπŸ’ͺ🏼!!! I saw a shirt on the weekend, “I bust mine so I can kick yours” just a little saying to give you the extra UMPH you need.   

  

As I said yesterday, I needed to pick up essentials from Shoppers Drig Mart – that included some baking supplies for my breakfast cookies (Peanut Butter Chia Oat cookies to be more specific for you) . Don’t worry the recipe will be in this post so settle in! 😍

I spend my Sunday evenings prepping my lunches and breakfasts for the work week ahead of me. Since I’m not a morning person, I don’t have excess amount of time after pressing snooze a few times 😁😴 so I do as much as I can the night before.  This is a very good habit to get into to help reduce your stress, no one enjoys rushing around to get to work on time! I plan a breakfast that I can take on the go to indulge on my commute and I usually make up an oatmeal concoction for lunch (I’ll post about my oatmeals soon).

This week I decided to whip up these cookies I mixed up last month, my boyfriend is a big fan so they are around often! I know breakfast is the most important meal of the day but I find it difficult to get in something substantial enough in me to start my day. Managing the time I do have in the morning is to the second for my required hygiene and look professional routine. Enjoying a nice full breakfast at my kitchen table just isn’t possible, I know you’re thinking “wake up earlier” but that’s not possible. So I’ll stick to my protein pacts cookie until lunch where the big tupperwares come out!   

Peanutbutter Chia Oat Cookie Recipe


1. Preheat oven 350 Fahrenheit 

2. Mix in a medium bowl; 

  • 1 1/2 cup quick oats
  • 1/2 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tbsp chia seed

3. Mix in a large bowl;

  • 1/2 cup softened butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 cup peanutbutter
  • 1/2 teaspoon vanilla 

4. Add oat mixture to sugar mixture and combine well

5. Scoop 1 tbsp balls and flatten with a fork on a greased baking sheet. Optional to sprinkle some sugar or drizzle a little honey on  top 

6. Bake for 8-10 minutes. Let cool for 3-5 minutes.

Things I want to try: updated

As I lay in bed and wined down from my day, all my thoughts become a little less scattered. I have the time and peace to think about life, the direction in going and where I want to go. 

This is going to to be an on going post, updated daily (hopefully) as I fulfill my ‘Bucket List’ and add new wonders. I don’t really want to call this a bucket list, I have a lot of unhealthy habits and I just want to try out home remedies or other health hacks I find in my research!

I welcome you to join me on this venture or even lend a helping hand with some links to great ideas to better my whole being as a human – mentally, physically, spiritually and emotionally. 

  
So far I want to research;

  1. Essential oils – anything and everything. What’s good for skin, headaches, psoriasis, hair (I don’t even know what else can benefit). Different methods; diffusing, inhaling, absorption etc. I want to know it all! I have heard remarkable stories from friends that had been long time users of essential oils and its my turn to hop on the wagon! 
  2. Coconut oil – I have heard this stuff is good for literally everything. Cooking, cleaning, hair, skin, teeth, cleansing organs, that list goes on and I want to know more!πŸ’¦
  3. Herbal teas – I want to make them! I won’t lie, I’m interested because I picked up some loose leaf THC Vanilla Roboiss tea at a dispensary up the street and it just got me thinking about making a homemade natural tea that doesn’t have all these additives and candied fruits.. What happened to dried herb and spiced teas that are actually beneficial to your health?! I’m going to find out more about that!β˜•οΈ
  4. NEW ** yoga – how could I for the biggest fad going around. Hot yoga, aerobic yoga, I want to stretch out my organs and regain my flexibility any method of practice I am up for! So I’ll be looking into yoga for beginners of course and checking out some yoga studios around the downtown area πŸ“Ώ

Smooth Sundaze: Berrie & Oats

I’m back!

I had to get some essentials for everyday living so I set out to Shoppers Drug Mart – again such a beautiful day my gooseness β˜€οΈπŸ™πŸΌ. While I’m strolling along soaking in the my surroundings, a gentleman asked if I’d like a complimentary Heineken.. Of course I did! I went inside to what ended up being a pop up shop promoting Heinekens new keg. I met a man from Amsterdam there -Luis from Amsterdam, who was doing demonstrations for Heineken on how to poor the perfect beer. He gave me the chance to pour some beer and granted me ‘certified pourer’status (I got a pin lol) 🍻! Needless to say I stuck around for a few extra complimentary beers and then crossed the street to Shoppers Drug Mart.  

You know summers coming in Toronto when.. #freebeer
 

Anywho, as I posted in my joyful Sunday morning experience with you earlier today, I promised to post my smoothie recipe! This smoothie is only the beginning, there are so many variations you can do yourself. Let me know what you do with your smoothies, I’m up to try anything!


Berry Oat Smoothie

Ingredients

  1. 1/2 cup Ice
  2. 1 cup Water
  3. 1 1/2 cups Frozen/frozen fruit
  4. 1 Banana
  5. 1 cup Instant oats
  6. 2 tbsp Hemp hearts
  7. 2tbsp Chia seeds
  8. 1/4 cup Yogurt
  9. 1 tsp Cinnamon
  10. 1 tbsp honey 

  Instructions

Add all ingredients to blender – starting with ice, water, fruit, and yogurt then the remaining items.

Pulse until ice is chopped and then blend until smooth.

Notes

Banana and fruit can be fresh or frozen, just keep in mind if frozen it will help with thickness. May need to add more water depending on desired thickness.

Sβ˜€οΈnday Morning Pancakes!

GOOD MORNING!

Rise and shine you wonderful people and get ready to take on another day! I used to be such a night owl, living the club life but since taking a break from binge drinking alcohol and partying till the sun rises I have found a new love – MORNING. Life before noon on the weekends are amazeballs, especially Sunday’s!!

It’s pretty rough not being a morning person but because of work I’m beginning to adjust my sleep pattern. The AM can be my most productive time, if I play the cards right – that means starting my day with a nice cup of coffee made from my French press! β˜•οΈπŸ˜ (I worked at Starbucks for 4 years so coffee became an addiction)

Hmmm… The most important meal of the day, what to whip up?!

Chocolate Chip Banana Pancakes and a Berrie Oat Smoothie sounds delightful to me! I worked at Booster Juice for years so smoothies became a regular habit to blend up. So much you can do with smoothies, I’ll share as many variations as I can but I keep to the basics and usually just change the berries with other fruit or cocoa powder mmm my chocolate oat peanut butter smoothie is a must share (so remind me if I forget to post about it)!

Anywho, here’s my pancake recipe

Ingredients

  1. 1 cup all-purpose flour
  2. 2 tbsp white sugar
  3. 1 tbsp baking powder
  4. 1/4 tsp salt
  5. 1 egg
  6. 1 cup milk
  7. 2 tbsp butter – melted then cooled
  8. 1/2 cup chocolate chips
  9. 2 bananas – sliced/diced

Instructions

Sift flour, sugar, baking powder, and salt together in a bowl.

Beat egg into milk in a separate bowl until thoroughly combined.

Pour melted butter into flour mixture; whisk in milk mixture to make a smooth batter.

Fold chocolate chips into batter.

Heat a small nonstick skillet over low heat; pour about 1/3 cup of batter into hot skillet and place banana chunks on top.

Cook pancake until browned on the bottom or bubble begin to form on top, about 3 minutes; flip pancake and cook for another 2 minutes or until browned to your preference.

Repeat with remaining batter.

Serve with butter and maple syrup, enjoy!!

Saturday Baking

Hey there!

Finally, the spring weather has decided to show its face in Toronto, YAY 🌻🌷!! You would think 24 years of being a Canadian you would be use the the dragged on gloomy winters we have, but I just can’t! So the beaming sunshine had me up and at it bright and early.

 I spent my morning preparing for the Toronto Raptors first play off game.. Wooo! I had prepped a to go bottle of my favourite vodka concoction (will share my recipe at the beginning of the summer for you sun worshippersβ˜€οΈπŸΉ) and headed out to Maple Leaf Sqaure – which gets transformed into Jurrasic Park for all fans to watch on the big screen!

After all that sun and drinking – their loss may have had a factor, but I went home for a big nap to recharge for the evening. An evening which included tacos but even more exciting this idea I had conjoured up for ‘THE ULTIMATE DESSERT’

Rejuvenated and ready to take on more of the day I went out for some groceries. As always, I found myself in Bulk Barn – my favourite store (aside from Dollarama), started stirring up ideas for tonight’s dessert and just wanted everything!

I grabbed the necessities for my chocolate chip cookies and brownies mix from scratch – my “go to’s” with a big glass of milk mmm.. (recipes including in this blog πŸ‘ŒπŸΌ) and my favourites – Reese’s Peanut Butter Cups and Double Stuffed Oreos! 


[This will not be one of my healthiest postsπŸ˜πŸ™ˆ] 

Ps. While I paced this isles of bulk barn, I took a look at their teas on sale and pick up ginger turmeric green tea. Ginger tea has amazing benefits for your organs and eliminating toxins in your body! I definitely recommend it to anyone with respiratory issues or beginning their health kick to a fit life β˜•οΈπŸ’ͺ🏼

Let’s get back on track to this devilish dessert – that I’m still waiting to come out of the oven! Below I have listed the needed ingredients and step by step instructions on how to replicate one for yourself, well hopefully you’ll be sharing! πŸ™‹πŸΌ

The Ultimate Dessert
 

Ingredients

Cookie Dough

  1. 1 cup (2 sticks) butter, softened
  2. 1 cup granulated sugar
  3. ΒΎ cup light brown sugar
  4. 2 large eggs
  5. 1 Tablespoon pure vanilla extract
  6. 2Β½ cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1 teaspoon salt
  9. 2 cups milk chocolate chips

Oreo

  1. 1 pkg Double Stuffed Oreos

Reese’s Cup

  1. 20 cups

Brownies

  1. 2 cup sugar
  2. 1/2 cup cocoa powder
  3. 4 eggs
  4. 1 tsp. vanilla
  5. 1 1/2 cup flour
  6. 1/2 tsp. salt
  7. 1 cup butter 

Topping (optional)

  1. Vanilla ice cream
  2. Caramel sauce
  3. Hot Chocolate fudge 

Instructions

1. Preheat oven to 350 degrees F. Line a 9×13-inch baking dish with foil. Coat generously with nonstick cooking spray.

For the Cookie Dough

1. Cream the butter and both sugars in a large bowl with an electric mixer on medium speed for 3-5 minutes. Add the eggs and vanilla and mix well to thoroughly combine. In a separate bowl, whisk together the flour, baking soda and salt, then slowly incorporate into the mixer until the flour is just combined. Stir in chocolate chips. For the Brownie Mix

2. Mix sugar, cocoa, eggs and vanilla; gradually add flour and salt. When that is mixed, blend in butter.

3. Spread the cookie dough in the bottom of prepared pan. Top with a layer of Reese’s Cups and Oreos. Mix together brownie mix according to directions, adding an optional ΒΌ cup of hot fudge topping to the mix. Pour the brownie batter over the cookie dough and Oreos. Bake at 350 degrees F for 45-55 minutes. Let cool completely before cutting. Brownies may still be gooey in the middle when still warm, but will set up perfectly once cooled. Top with ice cream, caramel and chocolate sauce, Enjoy!!!

Notes

You can place the pan in the fridge to speed up the cooling process. 

Feel free to use store-bought cookie dough and brownie mix to make this even easier!

When is the last time you did something for your first time?

Hey there!

I’ve graduated from college and moved to the big city, Toronto .. “The 6ix”. I spent last year on the east side near the beaches, too busy soaking it all in to think of blogging. Now I’m more central downtown, working full time with more of a set schedule – typical Monday to Friday 8-4 (can’t complain weekends off). So I like to spend my weekday evenings simple – aside from cooking, cleaning and all the fun stuff!
Professionally I am an Occupational/Physical Therapy Assistant, currently at a retirement home with the old folks! I’ve always been apart of the athletic community, played on all the sports teams imaginable. So I chose a profession that keeps me active as well as my clients. I dream big and one day would love to have my own clinic or home to provide care for everyone that needs some TLC!

On my spare time I have fidgety fingers and the passion to craft away, or bake some goodies! I’m always thinking of new creations I’d like to have or looking for new ideas to try out. So please feel free to share your thoughts and creations, as will I!

I’ve had some time over the winter to pick up arm-knitting and other craft techniques. I am happy to start sharing my Β  How To’s with you and hearing your feedback!
